with Elana Amsterdam
In 1993, Elana Amsterdam formed her first business ecosav, an environmental consulting firm, specializing in recycling. After waking up one day and deciding she wanted a change of scenery, she made a decision to move her family to Colorado. Shortly after, she and her son were diagnosed with celiac disease. Celiac disease is an inherited autoimmune disorder triggered by eating gluten. Out of necessity Elana’s cooking took on an entirely new dimension as they both went on a gluten-free, grain-free diet.
Unwilling to cook two separate meals each night for her family, she needed to make gluten-free food that tasted like regular food. With much trial and many errors, she developed a gluten-free repertoire that tastes delicious. While her cooking might not be complex, she appreciates that her food brings people together –those who eat regular food and those who can’t –to break bread in the warmth of the kitchen. She loves to make food that is not only good for you, but actually tastes good.
This passion led Elana from blog to book with the publication of The Gluten-Free Almond Flour Cookbook . It features over 100 gluten-free recipes, some of which appear on her website, elanaspantry.com, which receives 1 million views per month.
Elana has written for Parents, Shape Magazine, The Denver Post, and Delicious Living and has been featured in Crain’s New York Business, Fortune Magazine, The Washington Post and The Wall Street Journal, and has appeared on CNN and MSNBC. She is also the author of Gluten-Free Cupcakes, and the forthcoming Paleo Cooking from Elana’s Pantry.
